Xman’s Salsa
3 Serrano peppers
1 Cup of fresh Cilantro
1 can of diced tomatoes (Medium size)
3 green onions
1 teaspoon of salt
1 teaspoon of garlic salt
1 teaspoon of dry minced garlic
In a food processor, mix peppers, onions, cilantro, and minced garlic.
Then add tomatoes, and salt and garlic salt. For thicker salsa blend ingredients for
a shorter time, taste salsa and add garlic salt or salt for desired taste. If you want to
make a bigger helping just double all ingredients.

More power to you if you want. I don't care for salsa that is extremely hot. Serrano peppers are hot enough for me.

here is mine.....if i can remember all the ingredients right now
Sarges KickAss Salsa
7 jalepenos
1 white onion
1 can (28 ozs) crushed tomatoes
2 tablespoons oregano
2 teaspoons salt (more or less to taste)
3 cans of rotel ~ I use one hot and two mexican
1/4 cup lime juice
1 tablespoon fresh minced garlic
2 habanero peppers (leave them out if you can't handle the heat poo-c)
slice, jalepenos, onion, and habanero's add all ingredients in large saucepan. bring to boil and simmer for 30 minutes. let cool......add mixture to blender, and blend. go to walmart and buy tortilla chips.....enjoy your chips and Sarges Kickass Salsa!!!

I was just teasing you Xman.
Here's mine but I won't give you all the ingredients or all the amounts since mine is a ribbon winning recipe at the State Fair of Texas!!
6 quarts of tomatoes
2 cup chopped onions
2 cup chopped bell peppers
2 cups chopped jalapenos/habeneros
Green chilies
Vinegar
Sugar
Garlic
Salt
Cook in large pot. Bring to a boil, then simmer for at least 20 minutes. Put in sterilized pint jars. Put filled jars in hot water bath for 10 minutes.

Ok, I've got to get in on this salsa challenge. I've made Sarge's salsa a couple of times and it is kickasss good. For a change of pace (no pun intended), I like this tomatilla salsa:
1 Large can whole tomatoes
3-5 medium tomitillos
2 Jalapeno peppers (or 5 serrano’s)
3-5 fresh garlic cloves (minced)
½ bunch cilantro leaves (minced)
Salt
Lime juice
Remove the husks from the tomitillos. Place tomitillos and peppers in water to boil until tender (don not boil until they burst).
After boiling, remove stems and put in blender along with the other ingredients.
Pulse to desired consistency.
Better if you make it a day ahead of time, so the flavors can blend in the fridge.

I need to try and jar some of mine. I have always just ate it with in a few days. I would like to save some for later also. :redthumb: I'll have to give a few of these other recipes a try though.

Just a recommendation... If you decide to can some, leave out the cilantro then add it fresh when you open a jar. It just has a better taste and texture when it's fresh; IMO.

I have a couple recipes. The latest is more like a hot sauce, but is super addictive!
12 jalapeños--boil them until very tender (at least an hour). Make sure your kitchen has good ventilation!
1 large can Muir Glen Fire Roasted Tomatoes
Garlic powder
Salt
Puree all ingredient. Adjust garlic and salt to suit your taste. Serve.
I also have a recipe that has fresh romas, cilantro, tomatillos, jalapeños (or habaneros), garlic, lime juice, super finely chopped celery, and salt. It was always a hit at get togethers and such.

It's done. Kind of a conglomeration of five or six recipes. I did simmer it for awhile then hit it w/ the blender. Tossed in some cilantro and finely diced uncooked maters into t he warm salsa at the end to give it a little toothiness.
Turned out great.
I make a lot of pico, but any salsa I make is normally a fruit salsa.

I made Sarge's salsa and it was really, really good. i didnt add all the peppers b/c it was plenty hot.
